Cookie dough Brownie

This is definitely not one to make if you are counting calories but it tastes amazing! Imagine biting through a wonderfully chewy cookie to reveal a dense rich chocolate brownie, it is a match made in heaven. The cookie dough is a lot wetter than a standard cookie dough so you can swirl it through the brownie batter. Feel free to add chopped nuts, different types of chocolate, chopped chocolate bars, marshmallow…..If you have your favourite brownie or cookie recipe feel free to use them.

Cookie dough Brownie

Prep Time: 20 minutes

Cook Time: 30 minutes

Total Time: 50 minutes

Yield: 16 brownies

Cookie dough Brownie

Ingredients

  • Cookie:
  • 50ml oil
  • 50ml soy milk
  • 1/4 cup light brown sugar
  • 1/4 cup white sugar
  • 1 tsp vanilla extract
  • 3/4 cup + 1 tbsp plain flour
  • 1/8 tsp bicarbonate of soda
  • 1/8 tsp salt
  • 1/4 cup chocolate chunks
  • Brownie:
  • 1/3 cup boiling water
  • 1 tbsp instant coffee
  • 1tbsp margarine
  • 1oz dark chocolate chips
  • 1/3 cup oil
  • 1/2 tbsp vanilla extract
  • 3/4 tsp sea salt
  • 1/2 cup cocoa powder
  • 1 1/4 cup +2tbsp sugar
  • 1/2 tsp baking powder
  • 1cup + 1.5tbsp plain flour
  • 1/4 cup hot water
  • 1/4 cup chocolate chips

Instructions

  1. Pre-heat the oven to 180C and line a square tin with greaseproof paper.
  2. Cookie:
  3. In a large bowl beat together the oil, milk, brown sugar and white sugar until combined, add the vanilla and stir
  4. Add in the flour, bicarb and salt and stir until just combined, this is a runny batter so it won't be as thick as normal cookie dough
  5. Mix in the chocolate chunks
  6. Brownie:
  7. Combine the 1/3 cup water with the coffee, margarine and 1oz chocolate, stir until smooth and all melted
  8. Add the oil and vanilla and set aside
  9. Put the cocoa, flour, sugar and salt in a big bowl and stir until combined
  10. Add the coffee/ chocolate mix and stir until almost combined
  11. Add the 1/4 cup water and chocolate chips and stir until combined
  12. Pour the Brownie batter into the prepared tin then spoon the cookie dough randomly on top.
  13. Using a skewer or small knife swirl together the cookie and brownie.
  14. Bake for 30 minutes
