Crusty White Bread

Some days there is nothing better than a loaf of fresh white bread with a thick crunchy crust spread liberally with (vegan) butter. Home-made bread isn’t hard to make, just time consuming. Mixing 4 ingredients, kneading, proving and ending up with beautifully golden loaf which has a wonderfully cracked crust and soft, fluffy centre. There is nothing that fills me with a greater sense of achievement than pulling a perfect loaf out of the oven and hearing it crack as it cools.

Important things to remember when making bread is to use bread flour, regular flour doesn’t have the high amount of gluten needed for making bread, use yeast that hasn’t been open ages because it does go off and you will have a flat bread, finally you want the water to be warm but not hot or it will kill the yeast. White Bread

Prep Time: 2 hours, 30 minutes

Cook Time: 45 minutes

Total Time: 3 hours, 15 minutes

Yield: 1 large loaf

White Bread


  • 500g Strong white flour
  • 7g Dried yeast
  • 300ml Lukewarm water
  • 1.5tsp Sea salt
  • 2tbsp Oil


  1. Mix together the flour and yeast in a large bowl
  2. Add the salt, water and oil
  3. bring together until it forms a dough
  4. knead the dough for about 15 minutes or until you can thinly stretch a little piece of the dough without it tearing
  5. lightly oil the bowl, return the dough to the bowl and cover with cling film
  6. Leave for one hour or until doubled in size
  7. Tip the dough onto a work surface and shape your dough
  8. Place onto a baking tray and leave to rise again for about 1 hour until doubled in size
  9. while you are waiting for the dough to prove preheat the oven to 200C and place a baking tray with low sides in the bottom of the oven
  10. Sprinkle the dough with a little flour and score the bread using a sharp knife
  11. Add a couple of tablespoons of water into the hot baking tray, and quickly add the bread
  12. Bake for 15 minutes before reducing the temperature of the oven to 190C, continue baking for 30 minutes
  13. Leave to cool completely before serving
