Meringues with No Egg White!

It has been a question to last the ages; is it even possible to make meringue vegan? Minds puzzled and boggled until one mad genius discovered that the water from a tin of beans acts exactly like egg white, who knew!? May I introduce you to the wonders of aquafaba. I have used this a couple of times in my blog before but not as meringues. These are exactly the same as non-vegan meringues, the same glaze and crisp shell with a slightly gooey centre. The process is the same too, whip, add sugar, pipe, bake long and slow. Once again I cannot take credit for this recipe, please see here. But this recipe could fool anyone, I tested it in the office and no-one guessed there was no egg in them.

Whip until stiff peaks form!
